The concept grew from a bagel and a schmeer, the way a bagel with lots of cream cheese shifts and turns when pressed. Dynamics were created in a straight-forward retail space, with a shifted grid in the floor and ceiling. The schmeer reappears with a fluid line of neon light over the cash register. A glass block wall greets visitors with sparkling light and a peak of the operations beyond.
